Blueberry Banana Muffins

This is a simple banana muffin recipe that I’ve made a few times. It lends itself very well to adding blueberries because it is a lighter, less complex muffin. I finished the latest batch this morning – yum!

3 ripe bananas
100g oil
100g sugar
2 eggs
1 tsp vanilla
250 self rising flour
1/2 tsp soda
1/2 tsp cinnamon
Blueberries*

Preheat oven to 180C/350F.
Put muffin cases into muffin tins.*
Mash bananas and mix in vanilla.
Mix sugar, oil, and eggs.
Mix dry ingredients.
Beat dry ingredients into oil mixture.
Add bananas and mix
Gently fold in blueberries
Put into muffin cases, about 2/3 full.
Bake until fully cooked through, about 15 minutes.

* If you are using blueberries, it’s much more important to put in muffin cases as it is difficult to get them out of the tin otherwise. Banana muffins don’t generally need muffin cases, and if you omit blueberries you can skip this step.
