Oatmeal Butterscotch Chip Cookies

1 1/3 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 cup (2 sticks) butter or margarine, room temp
1/3 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs, room temp
1 tsp vanilla
3 cups oats
1 package butterscotch morsels

Preheat to 350. Combine dry ingredients in small bowl – flour, cinnamon, and salt. Cream butter and sugars, then add eggs and vanilla and fully incorporate them. Add dry ingredients. After well combined, add the oats 1 cup at a time. Add the butterscotch chips.

Place on ungreased cookie sheets and bake for about 10 minutes or until browned. Let stand for a few minutes before removing.

These are a special treat, something about butterscotch morsels is just magic! In Ireland they do not have butterscotch morsels so they are even more magical.
