Blueberry-Lemon Muffins

1 3/4 cup all purpose flour
1/3 cup white sugar
2 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon *

1 small container lemon yogurt *
1/3 cup vegetable oil
1 egg
2 tbsp milk
1 tsp grated lemon peel
1 tsp lemon juice

1 cup blueberries

Preheat oven to 400F (200C).
Grease muffin cups or line with paper.
Mix all dry ingredients in large bowl.
Mix all wet ingredients in small bowl.
Dump wet ingredients into dry and stir until moistened (will be lumpy).
Fold blueberries in gently
Fill 2/3 full.
Bake until browned and cooked through.

Yield 12 – 16 muffins

* Cinnamon is optional.  Also note that there is no vanilla required, yogurt takes that place.  I’ve been using a full fat lemon curd yogurt.  Yum!
