Turkey Chili

1 package ground / minced turkey (about a pound)
1 onion
3 cloves of garlic *
1/2 red pepper *
1 can chopped tomatoes
1 small can tomato sauce
1 tsp sugar (to cut acid)
2 tbsp chili powder, standard such as Target brand
1 tsp cumin
salt to taste

Optional toppings, serve separately:
Grated cheese
Cilantro sprigs (coriander)
Sour cream

Empty tomato cans into crock pot
Add seasonings, taste and adjust to your own preference
Set to high as you prepare the rest
Brown turkey, salt a little at this stage.
Chop onion and garlic and red pepper (if you are using).
Turkey does not need to be fully cooked, so when you are done chopping move on.
Lift turkey out and into the crock pot, leaving some of the fat.
Brown the onion, garlic, and red pepper in the fat.
Dump all veg into slow cooker.  Add water if liquid is not fully covering
Put cooker onto low setting and let cook.
Around 4 hours minimum, it gets better as it cooks longer.

Note: I no longer follow a recipe, I make chili purely by taste.   There are lots of variations you can make on this recipe, the key is to know what you like and be willing to experiment.  Both garlic and red pepper are optional, but I prefer it with them both.
