Peanut Butter Cookies

Peanut Butter Cookies
Gluten Free and Dairy Free!

2 cups creamy peanut butter *
1 1/2 cups sugar
2 large eggs
2 tsp baking soda
a pinch of salt
1 tsp vanilla

Preheat oven to 350F / 180C.
Beat peanut butter and sugar with an electric mixer until fluffy.
Add eggs, then baking soda, salt, and vanilla
Roll the batter into about 1 inch balls then press with a fork, 2 presses perpendicular, the proper marking for a pb cookie.
Bake the cookies for about 10 minutes, until they’re puffy and golden brown.
Let them sit on the cookie sheet for a few minutes.
Transfer to a wire rack to cool.

* I used a smooth peanut butter that is 93% peanuts and the cookies were delicious. This pretty much takes a full 450g jar. It’s difficult to measure peanut butter. Next time I’m just putting in the whole jar!

This recipe is adapted from “One Bite Won’t Kill You” by Ann Hodgeman, one of my all time favorite cookbook authors. This is her book on feeding kids. Hilarious. The original name of this recipe is “Honest to God, the BEST Peanut Butter Cookies, I Swear.”
