Chocolate Chip Meringue Cookies

2 egg whites
1/2 tsp salt
1 1/2 cups powdered sugar
1 tsp white vinegar
1/2 tsp almond extract
1/2 cup small chocolate chips

Preheat oven to 300F / 150C
Cover baking sheets with parchment paper
Whip egg whites and salt until stiff peaks form
Sift in powdered sugar and whip in batches
Add vinegar and almond extract
Whip again until fluffy
Stir in chocolate chips
Put onto baking sheets in spoonfuls
Bake until cooked through, about 20 minutes

** It has been years since I made meringue cookies and I couldn’t find my old recipe. I pulled this off the internet but changed it very significantly. I remember that my recipe had almond extract and I love that flavor in meringue. The vinegar worked very well, there is no taste off of it in the baked cookies and the meringue texture is excellent.
